of Advanced Education, 1977 Employment History Tutor, University of Queensland, 1978-81 Research Interests Bruce D'Arcy has research interests in food flavour analysis using GC, GC-MS and HPLC, particularly involving SPME (honey, tea, UHT milk, macadamia nuts); ultrasonic spectroscopy of food; microencapsulation of flavour; flavonoids in tea and honey using HPLC and LC-MS; nut composition; meat chemistry; application of ultrasound to food processing; and physico-chemical characteristics and antimicrobial properties of honey. Dr Bruce D'Arcy is also Director of the Australian Honey Research Unit and is extensively involved in researching all aspects of Australian honey in close collaboration with the Australian honey industry.
