Research Interests

Peter Torley has research interests in food extrusion and the processing properties of meat. His food extrusion interests include the extrusionof starch and honey mixtures and the use of extrusion to produce high moisture texturised products. Peter's meat gelation interests include the influence of raw material characteristics (eg source animal, fibre type, post-mortem changes in proteins) on gel forming ability.
